Chicken Detox Soup

Along with the beautiful fall colors, October also brings cold and flu season. If you find yourself or someone in your family the unlucky recipient of a virus, this soup is the perfect meal to help you feel better faster. Protein, vegetables, vitamins, and minerals provide nutrients to help your body fight the bug, boosts hydration and gives you energy. The best part… it’s so delicious we have it regularly in the fall and winter even when we are well!

Detox Chicken Soup

This Chicken Detox Soup recipe is fast and tasty. It's a healthy cleansing soup, and is great to whip up anytime you need a do-over in your eating plan.

Ingredients
  

  • 1 1/2 lbs chicken breast bonesless & skinless
  • 3 cups broccoli florets
  • 2 1/2 cups carrots
  • 2 cups celery
  • 4 cloves garlic
  • 3 tbsp fresh ginger
  • 1 large onion
  • 1/4 cup parsley
  • 1 1/2 cup frozen peas
  • 2 qt chicken broth
  • 1/4 tsp red pepper
  • 1 tsp salt
  • 1/4 tsp ground turmeric
  • 1 tbsp apple cider vinegar
  • 2 tbsp olive oil

Instructions
 

  • Set a large sauce pot over medium heat. Add the olive oil, chopped onions, celery, ginger, and garlic. Saute for 5-6 minutes to soften. Then add the raw chicken breasts, broth, carrots, apple cider vinegar, crushed red pepper, turmeric and 1 teaspoon sea salt.
  • Bring to a boil, lower the heat, and simmer for 20+ minutes, until the chicken breasts are cooked through. Then remove the chicken with tongs and set them on a cutting board to cool.
  • Add the broccoli, peas, and parsley to the pot. Continue to simmer to soften the broccoli. Meanwhile, shred the chicken breasts with two forks, and stir it back into the soup. Once the broccoli is tender, taste, then salt and pepper as needed. Serve warm.
