Hearty Homemade Vegetable Soup


January, with its chilly weather and post-holiday reset, is the perfect time to whip up this hearty homemade vegetable soup. This soup not only offers comfort during the colder days but also honors the healthy living intentions that many of us set for the new year. Packed with an array of colorful vegetables and rich in nutrients, this vegetable soup serves as a versatile and satisfying meal. Its versatility allows for endless customization, ensuring that every bowl can be tailored to suit individual tastes and dietary preferences. And even though it’s homemade, the simplicity of this soup makes it an ideal recipe for busy winter days.

Hearty Homemade Vegetable Soup

Ingredients
  

  • 2 tbsp olive oil
  • 1 large onions chopped
  • 4 cloves garlic minced
  • 1 cup chopped red yellow or green pepper
  • 2 stalks celery chopped
  • 1-2 bags of frozen organic mixed vegetables
  • 1 14 oz can diced tomatoes
  • 6 cups stock vegetable, chicken or beef
  • 1/2 lb dried navy beans soaked overnight or 1 14oz can drained and rinsed
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 2 tsp thyme
  • 1 tsp tumeric
  • freshly ground black pepper
  • Optional: 1lb diced chicken or ground beef

Instructions
 

  • Gently sauté the onion in the olive oil for 5 minutes until softened.
  • Add the minced garlic and cook for 1 minute.
  • Add the rest of the vegetables and the herbs, but not the black pepper, and gently sauté for 3 minutes.
  • Add the diced tomatoes, vegetable stock, beans and diced chicken or ground beef if using.
  • Bring to the boil then cover with a lid and reduce the heat.
  • Cook on a gentle heat for 25-30 minutes, stirring occasionally.
  • Remove from heat, season with freshly ground black pepper and serve immediately in warmed bowls.
  • Serve with hot crusty gluten free bread for a satisfying meal.

Notes

This soup also freezes really well, put single portions into freezer tubs and freeze, then you’ll have some warming soup ready made for those cold, winter days.
