Chicken Salad

Ingredients
  

  • 2 cups cooked chopped chicken or shredded chicken
  • ½ cup Avocado Mayo
  • 1 rib celery diced
  • ¼ cup diced pickles any variety
  • 1 green onion thinly sliced
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt more to taste
  • teaspoon black pepper or to taste
  • Additional Options: fresh or dried dill Trader Joes Chili Lime seasoning, chives, red onion, chopped nuts.

Instructions
 

  • In a medium bowl, add chicken, mayonnaise, celery, diced pickles, green onion, mustard, salt & pepper. Mix well to combine.
  • Taste and season with additional salt and pepper if desired.
  • Serve in one half of a red or yellow bell pepper, as a salad topper, or open-faced on a slice of sourdough bread.
