Chicken Salad
Ingredients
- 2 cups cooked chopped chicken or shredded chicken
- ½ cup Avocado Mayo
- 1 rib celery diced
- ¼ cup diced pickles any variety
- 1 green onion thinly sliced
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt more to taste
- ⅛ teaspoon black pepper or to taste
- Additional Options: fresh or dried dill Trader Joes Chili Lime seasoning, chives, red onion, chopped nuts.
Instructions
- In a medium bowl, add chicken, mayonnaise, celery, diced pickles, green onion, mustard, salt & pepper. Mix well to combine.
- Taste and season with additional salt and pepper if desired.
- Serve in one half of a red or yellow bell pepper, as a salad topper, or open-faced on a slice of sourdough bread.
